Pickled Northern Pike (Note: this is a cold fish brine recipe; you do not use heat for any of the steps.) 1st step: Filet your fish. You can leave the bones in the meat, as this recipe dissolves the bones as it cures. Cut fish in bite size or larger (smaller) pieces. 2nd step: Pack loosely in quart glass jar. Add 5/8 cup of pickling salt per quart. Fill with white vinegar to cover fish. Shake jar until salt is dissolved. Let stand 5 days in the refrigerator, gently shaking once a day. 3rd step: After the 5th day, remove fish from jar, wash fish with cold water, and drain. Let stand in cold water 1/2 to 1 hour; drain again. 4th step: Using a quart jar, fill the jar to the half-way point with the cold drained fish in loose layers of sliced onions. Add 2 cups white sugar, 2 tablespoons pickling spice, dash of dried red peppers. Continue filling jar with alternate layers of fish and onions. Add enough white vinegar to cover the fish and onions. 5th step: Let stand in refrigerator for one week for flavor. Keeps in refrigerator for 3-4 months. Serve with crackers! Thanks for the recipe! If I can land a respectable sized jack this year, may have to try it out. Like that the bones can be left in, forget how to fillet a jack properly

Peter Piker Picked a Peck of Pickled Pike! If I get into a good run of pike, I definitely will give one this a try! Does anyone have a recipe that can be stored on the shelf? ....TIM

DizzyDoc dude if you can get out to Souris River ASAP! you wont be sorry this morning i caught tons of pike it was excellent! i just got back! in 2.5 hours i landed over 30 pike...Alot of lil guys but serious fun a few ok ones lost alot!,,, kept my limit of ok sized jacks for pickelin.. What a blast !!! any minnow pattern works for shore right now just below the dam a simple 15 - 20 ft roll cast back into the current is the way to go...and you have a pike on every time... I know BASS poppers would be blaST THERE NEVER HAD ANY WITH ME.. vERY AGGRESSIVE STRIKES.... here have a peek... I USED A bigger size two white pearl zonker...but im sure pretty near anything chuck out there now will produce... And if you stay till DARK the bullheads will come out theres some huge buggers in there caught two over 15!!! MA bullheads the black ones!! anyways im starting the pickeling..process but first the slime lol the cleaning!! heres the pics for today.. as you can see the fly was trashed but i used it to the bitter end!!! The old cheap cherrywood produced!! wasnt gonna break my good fly rod on them . lol
